The dough, made from flours rich in gluten and precious extra virgin olive oil, without the use of any preservatives, is left to leaven for a day and a night: a very slow ‘long leavening’ process. At this point, the Bibanesi are shaped and stretched by hand. Finally, a light sprinkle of sesame enriches and further enhances their unmistakable flavour.
Because of this special processing and the careful research of flavours, Bibanesi are more fragrant than normal hand-stretched breadsticks, more delicious than the usual buns and are the right accompaniment for every dish and at any time of day.
